Pecan Pie and Cream Pastries

This delicious Pecan Pie recipe was the Blue Ribbon Winner of the 2022 Georgia National Fair Pearson Farm Pecan Recipe Contest!

Pecan Pie Ingredients

1 1/2 cups Pearson Farm Pecans, chopped, toasted      2/3 cup light corn syrup

2/3 cup dark brown sugar, packed                                1/3 cup butter, cubed

2 large eggs, lightly beaten                                           1 teaspoon vanilla extract

1/4 teaspoon salt                                                           Smuckers Caramel Sauce

Pecan Pie Instructions

In a saucepan, stir together pecans, corn syrup, brown sugar, butter, eggs, vanilla and salt.  Bring to a boil over medium high heat; reduce heat and simmer, stirring constantly for 8 minutes or until thickened.  Cool to room temperature and store in a container in the refrigerator until ready to use.

 

Cream Ingredients

4 ounces cream cheese, softened

2 tablespoons sugar, heaping

1 1/2 cups Cool Whip

1 teaspoon vanilla extract

Cream Instructions

In a mixing bowl, beat together cream cheese, sugar, Cool Whip, and vanilla extract.  Refrigerate until ready to serve.


Pastry Ingredients

1 package puff pastry shells

Pastry Instructions

Preheat oven to 425 degrees, place shells on baking sheet and bake 18-20 minutes.  Cool on rack 5 minutes, remove tops and soft pastry, cool completely.

 

Assembly Instructions

When ready to serve, place some cream into each pastry shell, followed by pecan pie mixture and drizzle with Smuckers Caramel Sauce.
