Peach Daiquiri

Nothing says summer quite like a frosty Peach Daiquiri made with fresh, juicy peaches. It's easy to make, incredibly refreshing, and guaranteed to be the star of your next backyard gathering!
Ingredients
(Makes 2 cocktails)
2 large ripe peaches, peeled and sliced (about 2 cups)
4 oz white rum
1 oz fresh lime juice (about 1 lime)
1 oz simple syrup (adjust to taste)
2 cups ice
Pinch of salt (optional, but it makes the flavor pop)
Simple Syrup
Mix equal parts sugar and hot water until the sugar dissolves. Let cool.
Instructions
Add peaches, rum, lime juice, simple syrup, ice, and the pinch of salt to a blender.
Blend until smooth.
Taste and adjust:
- more lime if it's too sweet
- more simple syrup if the peaches aren't quite ripe enough
- more ice if you want it thicker
Pour into chilled coupe or margarita glasses.
Garnish with a peach slice or a sprig of fresh mint.
If serving a crowd (8 people)
8 large peaches
16 oz (2 cups) white rum
4 oz fresh lime juice
4 oz simple syrup
8-10 cups of ice
One more tip: if you have time, freeze your peach slices for a few hours before blending. Frozen peaches create a thicker, creamer daiquiri with less dilution from the ice, so the fresh peach flavor stays front and center. It's one of the easiest ways to make the drink taste like it came from a great cocktail bar.
