Ingredients
- 3 eggs
- 1/3 stick butter, melted
- 1 1/2 cups sugar
- 1 1/2 cups chopped pecans
- 1 tsp lemon extract
- Juice of one whole lemon
- unbaked 9 inch deep dish pie crust
Instructions
- Preheat oven to 400 F
- Mix all ingredients in order
- Do not use electric mixer - use wire whisk or for and mix just enough to break the egg yolks and mix slightly
- Pour into pie crust and bake at 400 for 10 minutes
- Turn down oven to 325 and bake an additional 40-45 minutes
- Pie is ready when center is mostly set - it only jiggles slightly when you shake the pan gently
