Pearson Farm is proud to announce the winner of our Recipe of the Month Contest for October 2011 is Anne Pearlman from Georgia!

Ingredients

  • 3 eggs
  • 1/3 stick butter, melted
  • 1 1/2 cups sugar
  • 1 1/2 cups chopped pecans
  • 1 tsp lemon extract
  • Juice of one whole lemon
  • unbaked 9 inch deep dish pie crust

Instructions

  • Preheat oven to 400 F
  • Mix all ingredients in order
  • Do not use electric mixer - use wire whisk or for and mix just enough to break the egg yolks and mix slightly
  • Pour into pie crust and bake at 400 for 10 minutes
  • Turn down oven to 325 and bake an additional 40-45 minutes
  • Pie is ready when center is mostly set - it only jiggles slightly when you shake the pan gently
