Ingredients

  • 1/2 cup all-purpose flour
  • 1 cup light brown sugar (packed)
  • 1 cup Pearson Farm Pecans (chopped)
  • 2 large eggs
  • 1 1/3 sticks butter (melted)

Directions

  • Preheat the oven to 350F degrees.
  • Grease well, 2 small muffin pans or 1 regular muffin pan.  
  • In a medium bowl, beat egg until foamy, then stir into the melted butter until smooth.
  • In a separate bowl, stir together the flour, brown sugar and Pearson Farm Pecans.
  • Add the egg mixture with the flour mixture until just combined.
  • Spoon the batter into the muffin tins.  Tins should be about 2/3 full.
  • Bake at 350F for 20-25 minutes. Use a tooth pick to check for doneness.
  • Don't over cook as they will be dry.
