Healthy Pecan Pie Bars

These healthy pecan pie bars are vegan, gluten free, paleo and taste just like a real pecan pie!  

INGREDIENTS:

Crust:

1 1/2 cups almond flour

1/4 cup coconut flour

1/4 maple syrup

1/3 cup coconut oil, melted

1 tsp vanilla

1/4 tsp salt

Filling:

1/2 cup coconut oil, melted

1/4 cup maple syrup

2/3 cup coconut sugar

1 tsp vanilla

1 Tbsp almond milk

2 cups Pearson Farm Natural Pecan Pieces

INSTRUCTIONS:

Preheat oven to 350 degrees F.

Grease or line with parchment paper an 8 x 8 inch pan

For Crust-  Mix together the almond flour, coconut flour, maple syrup, coconut oil, vanilla, and salt in a small bowl until well blended.  Press into bottom of pan.  Bake for 15-17 minutes or until slightly golden brown.  Let crust cool completely.

For Filling- In a saucepan, heat the coconut oil, coconut sugar, maple syrup, and vanilla until boiling (3-4 minutes), stirring constantly.  Once boiling, continue stirring and let bubble for one minute and then remove from heat.  (Cooking longer could result in burnt sugar.)  Stir in almond milk and Pearson Farm Natural Pecan Pieces.  Pour over cooled crust and bake 20 - 22 minutes.  Remove from oven and let cool on the counter 15 minutes, then refrigerate for at least 2 hours before serving.  

Store in refridgerator
