INGREDIENTS:

3/4 cup of Pearson Farm Pecan Pieces (we recommend toasting them to enhance their flavor)

1/2 cup (1 stick) unsalted butter, room temperature

1/3 cup sugar

1 teaspoon vanilla extract

1/8 teaspoon salt

1 cup all-purpose flour

OPTIONAL:

1/3 cup granulated sugar, for rolling

To up the pecan game, add 1/3 cup of Pearson Farm Pecan Pieces to the sugar, for rolling

 

DIRECTIONS:

1- Make Cookie Dough: With an electric mixer, beat the butter for about a minute, then add 1/3 cup of sugar and beat until light, about 1 minute more. Add vanilla, salt, and flour, mixing and scraping down the sides of the bowl until dough comes together. Fold in pecans.

2- Roll into Balls: Separate dough into 12 pieces; squeeze and roll in your hands to shape into balls. (If you choose, here is where you roll each ball in the sugar or sugar/pecan mixture.) Place, 3 inches apart, on a baking sheet.

3- Gently Flatten: Using the bottom of a glass, gently press each cookie to lightly flatten. Reshape sides if necessary.

4- Bake: In a 350 degree F (conventional) or 300 degree F(convection) oven, bake approximately 15 minutes. Rotate the baking sheet about halfway through. Remove cookies to a wire rack to cool completely. Enjoy!

Yield: One dozen cookies

Hey Derenda! Yes, you can use self rising flour. The cookies will just be puffier :)
