  • 2 1/4 cups all purpose flour
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter (softened)
  • 1 1/2 cups sugar
  • 2/3 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup mashed bananas
  • 1 teaspoon lemon juice
  • 1/2 cup Pearson Farm Pecan Pieces



Sift flour, baking powder, soda and salt together in small bowl and set aside.

In large bowl, cream together butter and sugar with mixer on medium speed. Add buttermilk, eggs and vanilla. Once blended, slowly add the flour mixture until well incorporated.

In separate bowl, combine bananas and lemon juice then fold into batter. Finally, add the pecans.

Pour batter into a lightly greased 9 x 5 x 3 loaf pan and cook in a 350 degree oven for one hour.
