Cedar Planked Salmon with Pecan Butter

Ingredients:
- 1 stick butter, softened
- 1/3 cup Pearson Farm pecans, toasted and finely chopped
- 3 Tbsp. maple syrup
- 1/2 tsp. cinnamon
- Pinch of salt
- 4 – 6oz. salmon fillets
- 4 – 6” Sautee Cedar Grilling Planks, Soaked
Directions:
Pecan Butter: Combine butter, pecans, maple syrup, cinnamon and salt in a small bowl. Spoon into a ramekin and refrigerate until solid (about 2 hours).
Heat grill 350-400 degrees. Place soaked planks on grill grates, close lid, and heat for 2-3 minutes. Flip planks and heat for an additional 2-3 minutes or until a light smoke develops. Season salmon fillets with salt and pepper, place on heated planks, and close lid. Grill salmon for 10-12 minutes or until rare to medium rare (salmon will continue to cook after removed from grill). Transfer planks (with salmon still on them) to a cookie sheet, lightly tent with foil, and allow to sit for 3 minutes. Place each plank on a dinner plate, top with a generous pat of pecan butter and serve.
