Fresh Apple Cake
- 2 cups sugar
- 1 1/2 cups Wesson oil
- 3 eggs
- 1 teaspoon vanilla
- 3 cups plain flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional)
- 3 cups finely chopped fresh apples
- 1 cup chopped Georgia pecans from Pearson Farm
Cake: Mix sugar, oil, eggs and vanilla. Set aside. Sift together the next 6 (dry) ingredients. Add to first mixture. Add apples and pecans. Bake in 9x13 pan at 350 degrees for 50-60 minutes (until cake pulls away from pan).
Topping: Mix 1 stick butter, 1/2 cup brown sugar and 1/4 cup milk. Bring all to a boil. Pour over cake. Topping will keep in refrigerator for several weeks.
