- 2 1/2 cups of sugar
- 1/2 cup white corn syrup
- 1/4 teaspoon salt
- 2 egg whites
- 1 teaspoon chopped nuts (Georgia pecans from Pearson Farm work well)
Mix sugar, syrup and salt in a heavy sauce pan. Add 1/2 cup of water. Cook and stir until the mixture dissolves. Boil until a small amount forms a hard ball when dropped in cold water. Gradually pour syrup in egg whites while beating for 5 minutes at a high speed. Add vanilla and beat until almost hard. Add nuts and pour into a buttered pan.
